Customer Review: A really good pan for sauteeing

In a New York kitchen, this stir fry pan can do multiple duty: I have used it as a wok (not perfect, but a creditable performance), as a skillet for steak (worked surprisingly well), for vegetables, even to steam rice. The non-stick coating is great, although it is a pity that cleaning it in the dishwasher is not recommended. That said,nothing sticks, so everytHing rinses off easily by hand.

Love to stir-fry? Look no further! This open stir-fry is perfect for cooking for one or for a crowd. The heavy gauge, hard-anodized aluminum provides even heating - no hot spots! The patented TOTAL Hi-Low Food Release system protects the nonstick surface from abrasion, allows food to slide out easily, and, along with the nonstick exterior, makes clean up a breeze. ...Coated inside and out with rugged nonstick, Circulon 2 cookware eliminates the chore of scrubbing pots and pans. Inside their bottoms, Circulon's patented Hi-Low system of concentric grooves creates narrow ridges to take utensil abuse, leaving low, wide grooves unscathed to readily release food and ensuring long life for the nonstick coating. Beneath the nonstick is harder-than-steel anodized aluminum. Pot and pan bottoms are left uncoated to conduct heat quickly and prevent hot spots. Slip-resistant synthetic grips on riveted, polished, stainless-steel handles stay cool on the stovetop and go safely in an oven up to 350 degrees F. Heavyweight, 18/10 stainless-steel lids polished to a mirror finish present a gleaming contrast to the attractive, charcoal gray, enamel-like appearance of Circulon 2's nonstick exterior.
The Hi-Low concentric grooves climb all the way up the rounded sides of this 12-inch stir-fry pan (which doesn't have a lid), permitting thorough stirring and scraping without damaging the nonstick coating. It's 3 inches deep, providing room for lots of vegetables or Asian preparations. Wide at the top and narrow at the bottom, it can be used to deep-fry food with less oil than a straight-sided pan.
